Beef stew with Guinness Stout and Prunes...

......Prunes ??

Yes, this is a recipe I have made before, at home..but not for awhile. It was GOOD

Serves 6 or more

1 - 1/2 lbs beef, cut into large cubes
1 cup dried prunes
1 12oz bottle of Guinness Stout
1 or 2 sliced leeks
1 onion, sliced
1/2 lb, or more of mushrooms, cut in halves

Preheat oven to 300 degrees
Soak the prunes in 1/2 of the Guinness for 30 minutes +
Oil up a skillet and brown the beef well. Set aside

Combine everything in a casserole and bake for two hours or more, until tender. It is even mo bettah, heated up the next day.

Hi cherv.......I re-read the recipe and it called for optional dusting of the beef in seasoned flour. I don't remember if I did this, but S&P would be my choice and no garlic (doesn't sound quite right)....

The recipe did not specify oven temp. I would guess 325-350 degrees.

I don't think slow cookers were in vogue when I cut out this recipe (1980 or so ?)... and never tried in a slow cooker.
