Blackberry Jam

In early Oct. I made about a 3/4 gallon of Blackberry Jam. I gave most of it away except a pint and a half I kept for my son and me. Then my oldest brother heard about the jam and wanted some. So did a friends dad. I had some berrys left I put in the freezer. So I told them I would do another batch. The second batch didn't jell up. I think I know what I did wrong. Brother didn't say a thing about it. Friends Husband kept the jar for her dad. They gave her dad the jar I gave them that jelled up. Friend and Husband used it as Blackberry surup on pancakes. This weekend I went by and they asked if I had any of the surupy batch left. They said it was the best thing they ever had on pancakes. So we traded a 1/2 pint of pancake surup (By Accident) for a 1/2 pint of pomaganite jelly. She makes great pomagranite jelly. She also cans some mean olives. This year I smoked some jalipenos for her to add to the olives. They are GOODDDDDD.

I've had a batch or 2 of jam not set up for me, too. Ya pay a pretty penny for flavored pancake syrups at the specialty store. Screwed up jam sure works fine & for a whole lot less $$.

When picking blackberries for jam or jelly, include about 25% to 30% green ones, and your jam will jell naturally without pectin. If you pick only ripe berries, your jam will need the addition of pectin and perhaps lemon juice if very sweet.

All failed jams are successful syrups!

Senior I'll keep that in mind next Labor Day when we are camping near the blackberry patch. What Rate? Retired AT1 here.

Half of my career was spent on board P3C Orions hunting you. Other half was on Carriers.

Ok. Today I put up 4 pints of Blood red Orange Marmolaide. It didn't come out red as I thought it would. 1 pt for 5ver, 1 pt for stick house(for son and me) 1 pt for friend(he gave me the oranges) 1 pt for brother that got runny black berry jam. This batch set up nicely. And I have enough oranges to do a second batch. Will probably do that batch in 2 weeks when back at the stick house.
