Question Camping With A Vegetarian

Next month, my daughter and I are headed off to Yellowstone National Park. She is a vegetarian and I was wondering what meals to cook that both of us can enjoy. I'd like to avoid restaurants as much as we can during the trip.

One idea I have is to make cheese enchiladas. That takes care of one night. But we have four more nights in the Yellowstone area to prepare meals for.

Any suggestions?

Why not ask her to do the cooking?

My daughter tried the Vegeterian life for a while.. And I let her do the cooking... She was good at it.

there are so many vegetarian dishes that are very conducive to cooking in a mh i would have a hard time choosing the ones i wanted for just that week.
there are several good books with lots of variation. just go to a book store and scan the cooking section.

Our daughter has been a vegetarian most of her life, just never liked eating meat. So, like others have said, we simply tell her to convince us that it is a good lifestyle, and let her do most of the cooking. Most is yummy, but as soon as I smell a BBQ it is all over!

There is something wrong with cooking tofu on a campfire, but she is our daughter, so we keep trying her cooking. It is great that you are doing the same with yours.
