Chocolate Pudding Mix
Yields 1 cup mix which makes 3 cups prepared pudding
I modified this recipe to allow me to use Splenda and have a "Cook & Serve" pudding without the aspartame. By scaling it down to single batches allows me to make up only the amount I want to as opposed to the original 13 cup mix. I then vacuum seal the mix into small 1/2 pint canning jars for storage with a label giving the preparation directions but you could easily store this in a ziplock plastic bag...
Combine 6 tbsp granulated Splenda, 3 tbsp + 2 tsp cornstarch, 3 tbsp+1/2 tsp non-fat dry milk, 3 tbsp + 1/2 tsp unsweetened cocoa and 1/8 tsp salt. Mix well. Store in air tight container.
To Prepare: Combine mix with 3 cups milk. Heat and stir constantly until it comes to a boil. Cool to serve.
