Clam Chowder

This makes a lot of chowder and is great for potluck dinners its VERY rich
in large pot
4 to 6 pcs bacon chopped and browned drain
add 1 bag of potatoes O'Brien and juice from 50+oz can of clams
bring to boil
whisk 2 eggs with 1/3 cup mayo and 1 cup milk this mix will thicken chowder
add clams and 3 cups milk then the egg mixture while still cool
bring back to heat but don't boil stirring continuously or egg mixture
will get stringy, add fresh ground pepper to taste

I bought the 32oz bag (Ore-Ida brand), but actually used only about 2/3 of it. I prefer less potato in my chowda. I also added 2 more strips of bacon for a total of 8 to crumble in (LUV bacon!!). I served it with fresh grated cheddar cheese & homemade croutons for toppings. YUM!

BTW, thanks, Mike for the recipes you post. Keep 'em coming. I copyclip them all down for my rv recipe file.

I add 1/2 of a 28oz bag if you add more it feeds more. Also try a 50/50 corn and potatoes
you can never go wrong with more bacon
the other way I use this recipe is to use clam juice no clams and add cubed
(1/5x1in) fish like perch, trout or cod all mild white flesh can mix them too

Manhattan Chowder
  • 1/3 cup chopped onion
  • 2/3 cup celery diced
  • 3 small peeled potato's cut in chunks
  • 1 cup canned diced tomatoes including juice
  • 2 dozen cherrystone clams (or 3 dozen mussels) scrubbed well
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 2+ cups juice (reserved from the clam cooking liquid)
  • 1 bay leaf
  • 1/2 tsp dried thyme leaves
  • 1/2 tsp freshly ground black pepper
  • cook clams in 2 cups water remove from shells cut into pcs and set aside
  • add all ingredients to pot but celery and parsley and clams, bring to boil cook till potato's are soft
  • add celery and parsley and clams cook about 10 min
