Last gas oven we had was in our '98 Santara, microwave or convection only since then. We found the gas ovens to be so spotty in cooking and temperature regulation lacking that we gave up on them.
Prefer the Advantium ovens over any of the others.

I prefer my convection oven to gas. Just read through the book that comes with it to familiarize yourself with it. When we had a gas oven, it was hard to light and didn't cook foods evenly. Doing away with the oven created more space for storage too.

I love the sharp convection grill microwave in my Trek and have a ge advantium at home. The sharp is smaller and cooks a bit different but both are good.

Convection cooking usually calls for reducing the cooking time ~25% OR reducing the cooking temp ~25F. Convection cooking works best for open vessels where the air can get to the food. Closed pots (i.e. covered casserole or dutch oven) don't benefit from reduced cooking time/temp as the circulated air can't get to the food.
I recently tried baking bread and it came quite well, nice crust, using reduced time method.

Once you get the hang of it, you won't go back to the uneven-heating oven. I only store pots & pans in our oven anymore. Just read the manual & experiment.

Once we installed one in our fiver while full-timing we never turned the gas oven on. They are every bit as good as a regular over and will cook anything.

Have a microwave /convection..use the microwave but didn't like how the convection oven cooks my morning biskits ..sooo... pulled the two burner Gaggineu cooktop out and put in a 2 burner gas cooktop with a gas oven..
The rest of the story is that the DW is 4'7 with spine deformities and I do not want her standing on a footstool trying to lift a heavy & hot casserole dish out of the overhead microwave/convection oven.. I have no issues at all lighting the pilot lights... electric ignition on cooktop & oven...

Just took a cooking class at Lazy Daze. The chef was incredible. Learning how to use the microwave with the convection cooking was something I had not even considered. Yes you can cook and brown a turkey for example. The actually had one of the nice Sharp ovens right off the shelf. The chefs spent a few days learning the unit and the techniques.
There are sites that will give you the information on cooking times etc. I use the convection alone for biscuits and they come out fantastic.

I used to bake a lot when we had a house. Really hadn't in the MH until last holiday season. Did a round of mini cheesecakes in the convection oven. They came out perfect. Next are baguettes.

We have cooked biscuits, bread, pot pies, tv dinners with no problems in our convection oven. Like you we had never used one at our house so when we bought the motorhome we figured our options were to starve or learn how to cook in the convection oven. Still haven't got the hang of making pizza tho. Good luck.

I like to be able to use my microwave while I'm baking. I have both a convection oven and a gas oven. I did not like just having the convection.

We have a microwave/convection oven. We use the convection oven the same way we use the gas oven in our S&B and don't really see much difference once you get used to it.

Only thing we use the gas oven for is storage. Microwave/convection with outside grill does everything for us.
