More than a few years ago I did the "WeighWatcher" Program and had great success. I have now found that I have gained a little weight back after starting a job where my hours have shifted to getting home later at night.
I also found that I will "stay on program" if I am public about it...so I have decided that I will post some low point recipes here to share with others that may know about WeightWatchers -and want some other recipes to try.

GARDEN VEGETABLE SOUP
2 medium leek, chopped
½ large onion, chopped
2 medium stalks celery, chopped
2 clove garlic clove(s)
64 oz Swanson Fat-Free Chicken Broth
8 oz baby carrots
3 small summer squash
16 oz Del Monte Italian Recipe Stewed Tomatoes
8 oz Progresso Dark Red Kidney Beans
16 oz Green Giant Whole Green Beans, Canned 10 oz
1 Can Green Giant 50% Less Sodium Niblet Corn
1 tsp basil
1 tsp dried oregano
1 tsp dried thyme

Directions

Spray the following 3 veggies with PAM: chopped onions, leek and chopped celery (plus minced garlic.) Sauté for a few moments. Add all other ingredients. Simmer 1 to 2 hours

servings -12
POINTS per serving 1

Special Notes
You can also use 1.5 tsp oleo or olive oil instead of Pam and then add 5.5 oz of cooked chicken meat and take point count up to 2.

Breakfast Vegetable Fritatta

I will sometimes take zucchini & crookneck squash along with mushrooms and slice them. I will then chop a little red bell pepper & onions. Season all of this with your favorite seasoning* and sauté it all in a pan sprayed with Pam. This will go into a container and be placed in the refrigerator.

In the morning I will pull out a small skillet, spray it with Pam -add some of the vegetables that I sautéed. I will then take a quarter cup of Egg Beaters and mix it with a little hot sauce, paprika, Italian Seasoning and salt & pepper while the veggies are heating up. I then pour the egg mixture into the skillet over the veggie mixture and cook it until the egg mixture is cooked.

This is a filling breakfast for me - all for 1 point.

*I tend to use Natures Seasons blend plus a little garlic, paprika & Italian Seasoning.

You can also use an egg -which will give you 2 points instead of 1 point.
