This is especially good with those fresh out of the garden cukes,and very refreshing!
Creamy Cucumbers
1/2 cup dairy sour cream or plain yogurt
1 Tablespoon vinegar or lemon juice
1 teaspoon sugar
1 large cucumber thinly sliced
1 small onion thinly sliced
1/4 teaspoon dried dillweed (optional)
1 teaspoon salt & dash of pepper
Stir together the sour cream,vinegar,sugar,salt,pepper and dillweed(if using).Add cucumbers and onion slices toss to coat.Cover and chill for 2 to 48 hours,stirring often. Stir before serving. Makes 6 side dish servings.

I made this recipe last night. We just finished it off and it was fantastic!! I chose not to use the dillweed. Also i like my cukes no longer than 4'' long. Thanks..

I don't use the dillweed either,and yes we like the smaller cucumbers also.If you don't have garden fresh cukes,the English cucumbers are really good for this,long slender and seedless.Glad you liked them!

My Dw and I tried this recipe without the dill, although I would have used some if I had some. It was quite good. One thing that I would make comment on was the onions. We used a mandolin to slice them thinly. That was perfect. The issue is that they kind of clumped together and were a bit of a hassle. I think I would cut them in half for a better salad. It could be that our onion was too big??
The taste was delicious and the prep time minimal. As Martha would say "It's a good thing"!

I usually cut my onions in half before slicing,makes for easier slicing and I don't get a mouth full of just onion!
