I got this recipe from a friend and wanted to test it before posting.I made it tonight,its soooo good,and will definitely be a camping recipe!

Upside Down Chocolate Pudding Cake


1 c. Bisquick (or other) baking mix
1 c. sugar
1/3 c. plus 3 T unsweetened cocoa powder
1/2 c. milk
1 tsp. vanilla
1 2/3 c. hot water

Mix the Bisquick, 1/2 c. of the sugar,ONLY 3 T. of the cocoa, milk and vanilla.
Spoon batter evenly into a greased crockpot(it will be rather stiff). Mix hot water,other 1/2 cup sugar and remaining 1/3 cup cocoa powder. Pour over batter in crockpot.
Cook on high 2 to 2 1/2 hours, or until batter is set. Be careful not to overcook. Serve hot with ice cream.

Glad you enjoyed it. Hot,gooey,chocolate cake while traveling will really be a treat,have to make this when we have someone else to share with or will eat too much of it ourselves!

I love Hot chocolate pudding cake! I'm going to make it with Splenda for baking (1/2 the sugar) and see how it turns out.

Lorna: How did it turn out using Splenda? DW and I not really allowed to have sugar but do like "pudding cakes."

It turned out okay. The batter was thinner than a full-sugar recipe. I used "splenda Sugar Blend for Baking" which is 1/2 sugar and 1/2 Splenda. I also cooked it slightly too long. I will try it again and start checking it before the 2 hour mark. I think it will need to be slightly gooey in the center. Bear in mind that I also used a homemade whole wheat baking mix.

Mine was firm,like a regular cake and the "pudding" was in the very bottom of the crock pot.I used a long handle spoon and dug all the way to the bottom when I served it. I bought a second crock pot just to use in the rv so I can make this camping. No more expensive than the ingredients are(except for the Splenda) you may as well give it a try and let us know how yours turns out. We both need to be eating less sugar.

Ok Di: Here's the report on our attempt with this pudding cake. Made two mistakes with it. One (under my suggestion, make that two and 1/2 mistake I guess) we used sugar for first time. Much too sweet for our taste. Second "possible" mistake, used outdated Bisquick-----Sept 07. Might try again only this time with Splendia and new Bisquick to see what might happen. Aside from that, pretty good stuff.

Oh no,hope using year old Bisquick you didn't have any added "protein" in your cake! I hope you get it to your taste,we really love it!

I made the cake again. I made up a new batch of baking mix first. I still used the Splenda for Baking (1/2 sugar - 1/2 Splenda). I cooked it on HIGH for 1 hour then dropped it down to LOW for 2 hours because I had to go into town. It turned out great. No slightly burnt flavour like last time.

Lorna,glad this one turned out good for you. I didn't have a problems with a burnt taste,but it may have been from your flour mixture,so lowering the temp.must have solved that problem!
