Do you have a crawdad recipie?

We are fortunate to have caught several of these with a can of dog food in a trrap...we now have about six of them and possibly more to come. How do you like to prepare them?

Take 6 children; have them wade around bare-footed in a pond or creek. Have them pick up stones and sticks and grab the crawdads underneath.
Shout a little when one pinches.
Throw the crawdads in a bread sack. Fill up a battered old saucepan that one of the kids has stashed in your fort with creek water, and boil it over a little dead stick fire. Salt the water if anybody brought some (they didn't). Shake the crawdads out of the bread sack into the boiling water, cook for about 5 minutes.
Dump the water and crawdads into someone's T shirt and burn fingers by picking up the crawdads before they cool off.
Pull the tails off the bugs and eat, then suck the juice out of the heads.
Throw the shells back in the creek so other crawdads can eat the parts. Go home so Mama can fix you lunch.

Hey, don't go making fun of those mud-bugs.
What kinds of recipe are you looking for on the crawfish....ditch critters or way.
You can just boil them in a spicy crab boil or you can cook them into many dishes.

That's not nearly enough to do anything with! You'll need lots more to make it worthwhile to even use a few of them in a salad.
Ken's right about boiling them in crab boil (with onions, lemons, and other goodies), but that's best done outside in a large pot and a propane burner.

We ended up with six of them and gave them away to a fellow camper. We ran out of time. Thanks for the advice and ideas!

Place on a cedar wood board. Season them with salt and garlic. Then roast for 15 min. Take out of oven and let cool. Then throw the crawdads away and eat the board.

This is the best one we have tried! Courtesy of Emeril Legasse:
Emeril's Tailgating Crawfish Boil
Recipe courtesy Emeril Lagasse, 2001
Prep Time:30 minInactive Prep Time:20 minCook Time:10 minLevel:IntermediateServes:6 to 10 servings
Ingredients
Stock:
- 3 gallons water
- 2/3 cup salt
- 1 tablespoon whole black peppercorns
- 2 packages dry crab boil
- 1 cup liquid crab boil
- 1 tablespoon hot sauce
- 1 tablespoon Essence, recipe follows
- 2 bay leaves
Crawfish, vegetables, and sausage:
- 12 new potatoes
- 3 ears corn, cut into thirds
- 3 artichokes
- 1 foot andouille, cut into 8 equal links
- 3 lemons, halved
- 2 yellow onions, peeled and quartered
- 2 heads garlic, halved
- 6 pounds live crawfish
- 6 pounds large, head on shrimp
- 1 pound asparagus, ends trimmed
- 1 cup melted butter, as an accompaniment
- Beer, as an accompaniment
- French bread, as an accompaniment
Directions
In a large stockpot fitted with a basket insert, combine the stock ingredients and bring to a boil.
Add the potatoes, corn, and artichokes. Cover and bring back to a boil, about 5 minutes. Add the sausage, lemons, onions, and garlic, cover the pot and return to a boil, about 5 minutes. Taste the stock and adjust seasoning as needed. Add the crawfish and shrimp, cover, and turn off the flame. Allow the mixture to steep for 10 minutes. Add the asparagus, cover, and let steep until the vegetables and crawfish are tender, 5 to 15 minutes.
To serve, line a table with brown paper bags and newspaper. Lift the basket from the stock and drain. Dump the basket ingredients directly on newspaper. Serve with melted butter, beer, French bread, and paper towels.
Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Reminder you MUST purge Crawfish first, before using in any recipe.
