1 lb. small cubed pork
4 tablesppons cooking oil
1 diced whole onion
1 cup diced celery
1/3 cup flour
1 tablespoon salt
1 teaspoon cumin
3 16 oz cans cooked white great northern beans
1 cup of chicken stock
3 small or 1 large can chopped green chilies
1 seeded and finely diced jalapeno

Mix flour, cumin and salt in a plastic baggie.
Put cubed pork in bag and shake to coat.
Heat oil in bottom of Dutch Oven
Brown floured pork
Remove browned pork and set aside
Put remaining flour from baggie in hot oil and cook while stirring for 2 minutes
Add chicken stock and mix until smooth
Add back pork and combine beans (with liquid), green chilies (with liquid), diced onions, diced celery and diced jalapeno.
Heat to low boil cover and put in 350 degree oven for 1 1/2 hours.

Serve with warm tortillas.

Some people like to add mexican four cheese and a spoon of sour cream to the top in the bowl.

A small of amout of diced bacon can also be aded when you brown the pork for a smokier flavor.

If you try it, I hope you like it.

P.S. This also can be made in a Crock Pot once the meat is browned, cook all day on low to make the meat fall apart tender.

That's a different recipe then the one I have, sounds good. Gonna have to give it a try. I just picked my frozed Big Jims from my sisters home in NM.
