I grew up as a kid eating alot of two things. Casseroles and Spaghetti. As an adult, I love casseroles and hate spaghetti, take a guess which my Mom made alot of .



Cheeseburger Macaroni Casserole

1 lb. of extra lean hamburger
About half of a medium onion (or a whole small onion) finely chopped
4 rounded cups uncooked elbow macaroni
1 can of cream of mushroom soup
1 can of milk (use cream of mushroom can) of 2% milk
½ tsp. of salt
¼ tsp. of pepper
About 1 ½ lbs. (or 24 oz.) medium cheddar, grated.
¼ cup Sour cream

Crumble and brown burger well in skillet. Season to taste with salt and pepper. Add chopped onion to burger just before it is completely browned and finish cooking at a low heat until onions are tender, about five minutes.

Bring large pan of salted water to boil (add 1 tsp. of salt to water). Cook the macaroni for six minutes at a full boil, uncovered. Drain and rinse macaroni with cold water in colander.

Add milk to cream of mushroom soup in different pan. Heat just to boiling and turn to low heat. Add grated cheddar gradually, stirring continuously. Add ½ tsp. of salt and ¼ tsp. of pepper. Congrats! You’ve just made cheese sauce! Add cooked macaroni and burger/onion mixture to cheese sauce. Pour into large (about 4 qrts) microwavable covered casserole dish. Microwave for 25 minutes on high, or bake in conventional oven at 350 degrees for about 45 minutes.
