Hominy Grill Shrimp&Grits

1--LB LARGE SHRIMP PEELED
2--ppTbs all-purpose flour
3----Slices bacon chopped
peanut oil (optional)
1 1/4 cups sliced mushrooms
1--large clove garlic minced
2--Tsp lemon juice
1/2 Tsp tabasco sauce
1/4 cup sliced scallions thin
Grated lemon zest
prepared Grits


Toss shrimp with flour until coated,shaking off any excess;reserve.In medium skillet over low heat, cook bacon stirring occasionally,until crisp.Drain oil andand seperate bacon bits. Put 1 1/2 Tbs of bacon oil in skillet (use peanut oil if you don't have enough bacon oil)Heat skillet at med-high---add shrimp--cook stirring until opaque--about 2 min.stir in mushrooms --cook 2 min.Stir ingarlic and bacon pieces until fragrant'do notlet garlic brown.Stir in lemon juice and tabasco--Remove from heat.--Garnish with scallions and zest

Thanks,will have to try this recipe,I don't remember having mushrooms in mine though but they were good. Can certainly make them a lot cheaper!
