Hot Meals On Cold & Windy Days

As anyone in the desert knows, a cold front came through this past weekend bringing rain, wind and even snow.
I saw the forecast and thawed a whole chicken to cook in the oven on Saturday. Then on Sunday I put on a pot of rice to cook while I picked the rest of the meat off the chicken. I sauteed the leftover chicken in a frying pan and stirred it in with the rice when it was finished.
Not exactly gourmet, but it sure hit the spot on a cold and windy day.

had put a chicken in a pot boiled it down to make a big pot of chicken rice soup,it is real good
