Grilled Salmon Recipe :

6 Salmon Fillets
1 1/2 tbs. brown sugar
2 tsp. butter
2 tbs. Dijon mustard
1 tbs. olive oil
2 tsp. grated ginger
1 tbs. soy sauce

Melt butter and brown sugar in a small saucepan. Whisk in Dijon mustard, grated ginger, olive oil, and soy sauce.
Lay out fillets on aluminum foil and leave enough extra space to raise the foil edges into a wall. Pour sauce over salmon and place on grill (medium heat) and cook for approximately 20 minutes.

Baked Salmon Recipe :

1 cup brown rice
2-1/2 cups water
1 lb. salmon fillet
1/4 cup orange juice
1 tsp dried rosemary
1 tsp dried dill weed
1 tsp dried basil
1 tsp lemon pepper
1 tsp of dry mustard

Preheat oven to 350 degrees. In a saucepan bring 2 1/2 cups of water to a boil. Add the rice and stir. Reduce heat, cover and simmer for 20 minutes.
In large pan, add just enough water to cover the bottom of the pan. Lay the salmon filet in the pan, skin side down. Place cooked rice around the outside of the fish. Sprinkle the orange juice over the fish and rice.
In a small bowl, combine the dill weed, basil, mustard, lemon pepper, rosemary and sprinkle over the fish and rice.

Cover with aluminum foil and bake in a preheated oven for 30 to 40 minutes or until the salmon is tender and flaky.
Recipe makes four servings.

Stir Fry Crappie Recipe :
This is a very easy recipe to make, and is very delicious and healthy.

2 lbs of Crappie fillets
2 cups of broccoli
1 wide sliced onion
2 cups of sliced mushrooms
1 wide sliced green pepper
Add more vegetables if you desire
3 pinches of garlic powder
3 pinches of Old Bay seasoning
5 pinches of seasoning salt
Dale seasoning sauce or allegro
Salt & Pepper to Taste

Sauté the vegetables in olive oil (just a drop or two) and seasoning sauce (Use a wok if you have one, or a deep frying pan will work - remember to use high heat). Sauté until the veggies are soft. Add the crappie cut into small chunks. Cook for about 10 more min. on high heat (until most liquids are absorbed). Stir frequently. Serve over rice.

Yogurt Baked Crappie Recipe

If you're looking for "something different" you have to give this crappie recipe a try.

8 - 10 crappie fillets
1 cup plain yogurt (cold)
1 cup flour
1 cup Italian bread crumbs
1/2 tsp. Creole seasoning
1 tbs. old bay seasoning
1/2 tsp. dried basil
1/2 tsp. dried thyme
1/2 tsp. garlic powder
1/2 tsp. oregano
1/4 tsp. black pepper
1/8 tsp. cayenne pepper
Cooking spray

Preheat your oven to 400 degrees. Evenly coat baking sheet with cooking spray. Place yogurt in a bowl. Toss all breading ingredients in a plastic bag and mix well. Dip crappie fillets in yogurt and then in breaded mixture. Coat each of the crappie fillets and place on the baking sheet. Bake 15 to 20 minutes on center rack.

Baked Crappie Recipe

This is another extremely quick and easy way to make crappie, as well as healthy.
Cut up crappie fillets in 2 strips and lay out on a cookie sheet
Spread some melted butter over the top of each crappie fillet
Shake on Cavender's Greek Seasoning (try experimenting with others)

Lightly cover each fillet with mozzarella cheese
Bake at 350 degrees for 15-20 minutes
1 cup shredded provolone and mozzarella cheese

Citrus Grilled Catfish Recipe

4 catfish fillets
1/4 cup oil (I have a preference for olive oil)
1/4 cup fresh lemon juice
1/2 tsp. garlic salt
2 tsp. dry minced onion
1/4 tsp. tabasco sauce
4 sliced lemon wedges

Rinse fillets and pat dry. Combine the remaining ingredients minus the lemon wedges in a flat dish (casserole dishes work great). Add catfish fillets and marinate in a refrigerator overnight, flipping several times. Grill fillets over medium-hot coals or over medium propane heat, basting the catfish frequently with the marinade. Expect about 5 to 8 minutes on each side or until the catfish flakes easily when tested with a fork. Squeeze lemon wedges over the fillets and serve.

Fried Catfish Recipe
This is a quick and easy catfish recipe that everyone loves.

4 catfish fillets cut into medium-sized strips
2 cups self-rising flour
1 cup milk (beer is a great substitution)
Cooking oil (vegatable oil works great)
Garlic powder, salt and pepper as needed

Combine half of the flour, milk, garlic powder, salt and pepper in a mixing bowl. Mix thse ingredients well. Coat the catfish strips in the remaining flour. Then drop the fillets in the batter and then in the pan. Using a skillet or a deep fryer, fry the catfish fillets until golden brown. Remove fillets and pat excess oil with a towel. Serve right away and accompany with tartar sauce.

Baked Catfish Recipe

4 - 8 Catfish fillets (or enough to cover a flat 2 quart casserole dish)
1 cup of milk (or just enough to cover the catfish fillets)
1 stick butter
1 bell pepper, chopped into small strips
1 small oninon, chopped into small strips
2 cups of flour
2 cans of shrimp soup
1 can sliced mushrooms (or slice your own)
1 lemon - squeezed
1/2 cup sherry
A couple dashes of worcestershire sauce
salt and pepper to taste

Soak catfish fillets in milk for a couple hours. Dip and cover each fillet in flour. Brown the catfish in butter, then puut into the dish. Brown the peppers and onions in butter until limp. Combine the shrimp soup, mushrooms, lemon juice, and add seasonings to taste. Pour the sauce over the catfish fillets and bake at 350?F for 30 minutes.

Crispy Baked Perch Recipe
This is a quick and easy perch recipe.

1 lb. perch fillets
1 cup crushed tortilla chips
1 tblspn oregano
1/2 tsp. garlic powder
1 egg
1/4 cup milk
1 cup shredded cheddar cheese
1 package of romaine lettuce
1 cup salsa

Preheat oven to 450?F. Combine chips, oregano and garlic powder in a small baking pan. Mix together the egg and milk in a mixing bowl. Dip the perch fillets in milk/egg mixture; then roll in the tortilla chip mixture. Place covered perch in a lightly greased baking dish and sprinkle with some remaining crushed chips. Bake for about 7-8 minutes or until the perch flakes with a fork. Take out of the oven and sprinkle cheese on top of the perch fillets. Continue baking the perch for another 2 to 3 minutes so the cheese is melted. Remove from oven, and place the fillets on top of the romaine lettuce and cover with a little salsa.

Perch Chowder Recipe
When you want a different kind of perch recipe...

2 lbs. diced perch
Diced large onion
5 diced potatoes
Diced green pepper
3 diced celery stalks
4 tblspoons of butter
2 beef bouillon cubes
2 cups water
Flour paste (3 tablespoons flour & 1/2 cup of water)
Salt and pepper to taste

Combine 2 cups of water, 2 tablespoons of butter, the bouillion cubes and salt and pepper together in a large boiling pot and bring to boil. Add the diced vegatables. Boil for maybe a minute or two and let simmer for around 2-3 hours.
Combine the flour paste and 2 tablespoons of butter together and coat the perch fillets. Add the coated fillets to the simmering pot, and let simmer for another 30-45 minutes.

Broiled Walleye Recipe :

2 lbs of Walleye fillets
Cut fillets into about 1/2" strips
4-5 Tablespoons of Lemon Juice
3-4 Garlic cloves, minced
3 Tablespoons of Soy Oil
3 1/2 Tablespoons White Wine
3 pinches of fresh chopped sweet Basil
Salt & Pepper to Taste

Blend all ingredients together. It should be a paste-like texture.

Place walleye fillet on broiler, skin down. Brush fillet with paste, than sprinkle paprika. Broil one side, 10 minutes per each inch of thickness. If you prefer a sauce, use marinade of fresh garlic, Dijon mustard, lemon juice, mayonnaise and soy oil. Garnish with fresh parsley, and some lemon wedges.

Walleye Recipe (BBQ) :

2 lb. walleye fillets, cut in cubes for skewering
sweet red, green and yellow peppers, cut for skewering
small whole onions, cut in half
2 tbs soy sauce
2 tbs teriyaki sauce
1 tbs liquid honey
1 tbs sesame oil
1 tbs cajun hot fish spices
1/2 tsp worcestershire sauce
salt and pepper to taste

Mix the last seven ingredients well. Mix the walleye, peppers and onions. Lay in a deep plate and cover with the sauce mixture. Marinate in the fridge overnight.
When ready to bbq, put fish, peppers, and onion on skewers. Make sure they are well pressed against each other, keeping in mind that the fish cubes will reduce in size while cooking. I suggest alternating the peppers for an appealing look.
