<span class="ev_code_blue">Mammy Simmon's Plantation Stew</span>
2 lb ………. Beef … xtra-lean …cut into ½" cubes
4 …………. Potatoes** ….. medium sized and cut into ½" cubes
1½ cup ….. Onion …... chopped
1½ cup ….. Celery .….. chopped
1½ cup ….. Carrots …. chopped
½ cup ………. Peanuts ……. use regular salted .. <span class="ev_code_red">NOT</span> dry roasted type
2 tsp .……… Black Pepper Corns
¼ cup ……... Flour
3 tbs …….... Cooking Oil
1 pkg …….. Beef Stew dry seasoning mix .. 1.5 oz pkg
1 can ……... Mushrooms …………... 4 oz size can
4 cup …….. Water ………….. or use your own judgment

* Place beef in large fry pan with cooking oil and stir to coat beef with oil.

* Mix flour and beef stew dry seasoning mix together.

* Sprinkle flour mix over oily beef a little at the time and stir until all of flour mixture has been used and the beef is evenly coated.

* Using a medium-high flame, brown the beef ….. takes about ten minutes.

* Dump browned beef into crock pot and add all other ingredients.
Gently stir to evenly distribute everything together.

* Cook on HIGH for about two hours and then turn on LOW and continue cooking for another four to six hours..

** I did not add any salt because of the salted peanuts and the package of beef stew dry seasoning mix. I suggest you do a taste test after cooking that first two hours on high and then decide if you want to add salt.

** This amount of ingredients will completely fill a normal size crock pot and will yield between six to nine servings, depending on serving size.

** I wash my potatoes with stiff brush under running cold water and leave skin on … but suit yourself .

** Being a single man, I divide the finished stew into one person servings in freezer baggies and freeze for later in the month.. I get about eight meals from my crock pot.
