AMISH MEATLOAF
1-1/2 lbs. lean ground beef
1 beaten egg
1/2 tsp. sage
1/2 c. Pet milk
About 2 cups Ritz crackers (crushed)
1/4 c. onion
1/2 c. Swiss cheese (shredded) plus some extra
Salt and pepper

Mix all above together; pat into an oval loaf in a baking dish. Put
the extra shredded Swiss cheese over top of loaf. Bake at 350 degrees
for 1 hour. Will freeze well.

MEATLOAF WITH SWEET-N-SOUR SAUCE
1 (8 oz.) can tomato sauce
1/4 c. brown sugar, packed
1/4 c. cider vinegar
1 tsp. prepared mustard
1 egg, slightly beaten
1 onion, minced
2 stalks celery, chopped
1/2 green pepper, chopped
1/4 c. Italian seasoned bread crumbs or crushed crackers
2 lbs. ground sirloin
1/2 tsp. Salt
1/4 tsp. black pepper

In a saucepan mix tomato sauce, brown sugar, vinegar and mustard. Cook
until sugar is dissolved. Set aside. Take onion, celery, green pepper
and 1 tablespoon water; put in bowl. Put Saran wrap over them and put
in microwave to soften. Combine egg with vegetables (celery, onion,
green pepper), crackers, salt, black pepper, meat and 1/2 cup tomato
sauce mixture. Mix thoroughly. Shape into loaf. Put into baking dish
and pour remaining tomato sauce mixture over meatloaf. Bake 350
degrees covered for 1 hour. Baste occasionally. If sauce thickens,
add 1/4 cup water to
sauce. Serve sauce separate. Serves 6.

1 slice bread, torn into sm. pieces or 1/2 c. bread crumbs, oatmeal or
crushed cornflakes
1 sm. chopped onion
1/4 c. chopped celery
1/2 c. grated carrots
1 egg, beaten
1 clove garlic, minced
1/2 tsp. Salt
1/8 tsp. Pepper
1 1/2 lb. ground beef or 1 1/2 lb. ground turkey

SAUCE
1/2 c. brown sugar
1/4 c. vinegar
1 tsp. Mustard
1/2 tsp. Paprika

Mix bread crumbs, onion, celery, grated carrots, egg, garlic, salt,
pepper and ground beef; mix well. Place in loaf pan. Bake at 350
degrees for 1-1 1/2 hours. To prepare sauce: Mix brown sugar, vinegar,
mustard and paprika; pour over meat loaf during last half hour of cooking.

CHEESE BACON MEATLOAF
2 lbs. ground sirloin or ground round
1 cup seasoned bread crumbs, I purchase it that way
1 large egg plus catsup for both to equal 1 cup
1/2 cup onion, chopped
salt & pepper to taste
1 to 2 tablespoons Hormel 50% fat free bacon pieces in the jar
1/2 to 1 cup sharp cheese

In a large bowl put the ground meat, bread crumbs, onion, salt,
pepper, bacon and cheese. Put the egg and measure the catsup to equal
1 cup. Then beat this mixture together and pour over the other
ingredients and mix well. Put this in a large loaf pan and cook at
350ºF for 1 hour to 1 hour and 15 minutes. Most do this step or it
will fall apart. Then tent foil over pan and rest for 15 minutes.
Depending on the thickness of the slices you can get 6 to 10 or more
slices per pan.

20 MINUTE MEATLOAF

2 tbsp. dehydrated onion flakes
1 lg. egg, slightly beaten
1 c. bread crumbs
1 (8 oz.) can tomato sauce

Combine all ingredients. Shape into 8 oval loaves. Bake at 450
degrees for 15 minutes. Meanwhile, prepare the sauce. 2 tbsp. brown
sugar 2 tbsp. parsley flakes 1 tsp. Worcestershire sauce Combine.
Spoon excess grease off meat loaves; pour sauce over and bake 5
minutes longer.

A-1 MEATLOAF
5 lbs. ground beef
3 tbsp. A-1 steak sauce
2 tbsp. Horseradish
2 tbsp. Grey Poupon mustard
1 tsp. Worcestershire sauce
1 tsp. garlic powder
1 tsp. onion powder
2 tsp. broiled steak seasoning
1/2 c. bread crumbs
2 eggs
1 tsp. Mrs. Dash
2 tsp. Pepper
Large bowl
In large bowl, break ground beef up and add all of above ingredients.
Shake into meatloaf and place on roasting pan or cookie sheet. Place
in oven and bake at 350 degrees for approximately 1 hour. Makes 16
servings.

ANN LANDERS' MEATLOAF
2 lbs. ground round steak
2 eggs
1 1/2 c. bread crumbs
3/4 c. ketchup
1 tsp. Accent
1/2 c. warm water
1 pkg. Lipton's onion soup mix

Mix thoroughly. Put into loaf pan, cover with 2 strips of bacon, if
you like that flavor. Pour over all 1 (8 ounce) can tomato sauce. Bake
1 hour at 350 degrees. Serves 6.

BARBECUE MEATLOAF
2 lbs. ground beef
1-1/2 c. shredded cheddar cheese
1 c. barbecue sauce
1/2 c. onion
1 egg
1 tsp. Salt
1/4 tsp. Pepper

Mix 1 cup of shredded cheddar cheese and 3/4 cup barbecue sauce with
ground beef, onion, egg, salt and pepper. Bake at 350 degrees for 45
minutes. Then top with remaining cheese and barbecue sauce and bake 15
minutes more.

3 Meat Loaf
Use any 3 different ground meats, beef, pork, deer, turkey, chicken, veal.
Layer each different meat separated by a couple slices of provolone cheese and black forest ham. Add spices to your liking. Layer each level about 1 inch thick in a high walled bread pan. Bake for the required 35-45 minutes at 325. Use your imagination, this can be really good. Make a couple and bake, then place in the freezer or for the road to save time for cooking when setting up camp.
