We have quite a few weekends planned for the season and are looking for some new meal ideas. We have 2 preschool girls, so if you have kid friendly that is great, but sometimes Daddy & I like to eat later after they go to bed so we can just relax. So any of your favorites would be appreciated. We are just looking to expand beyond burgers, turkey dogs, chicken breasts & steaks.

How 'bout "Mountain Pies"? Do you have pie iron or Panini iron cookers? If not, stop by WM & get ya some.
Basically, make any sandwich the way you like (ham, turkey, salami, roast beef, cheeze, tomato...etc), but butter the outsides of the bread like you would if you were making a toasted cheese sandwich. Put it in the pie iron & cook away in the campfire until the bread is toasted golden brown.
A play on this that Dave & I really like are pizza pies. Get yourself the prepared pizza dough that comes in the tubes in the refridgerated biscuit section of the grocery. Spray PAM on the insides of both pie iron halves. Cut the pizza dough to fit & put in 1 side of the pie iron. Top with pizza fixin's (sauce, pepperoni, mushrooms, olives, cheese...etc) but leave a bit of dough around the edges, like you would if making any regular oven baked pizza. Cut another piece of the pizza dough to cover & pinch the edges of the 2 pieces together (or you can cut the first piece long enough to hang over the edge & fold it over when you're done putting your toppings on. Put the pie iron together & cook in the campfire until the dough is nice & golden brown. A bit of work, but well worth the effort.
For dessert, you get the crescent roll dough in a tube (from the same refridgerated section). Spray PAM as directed above. Cut & fill half the pie iron with the dough. Fill with canned pie filling (I think cherry is best), top with another piece of cut dough & pinch edges together. Cook in campfire until it's golden brown & flaky. Serve a-la-mode with your favorite ice cream. Mmmmm, mmmmm good!
Oh, & be most careful on that first bite. The insides can be quite hot after just coming out of the campfire.
Almost forgot, when sweet corn is in season, get the freshest you can from a roadside stand. Carefully peel back husks (keeping them attached to the ear) & remove the silk. Fold the husks back over the ear. Soak in water for a couple hours. Wrap individually in aluminum foil. Grill over the campfire. Serve with lots of butter & fresh season veggies/fruit (tomatoes, cucumber, peaches). Now, some people put the husk-covered ears right on the grill without wrapping in alum foil. I feel, unless carefully watched, the corn can scorch & dry out. That's why I prefer wrapping the soaked ears in foil.
Oh geez, here's another (gotta love that edit feature!)...Anyone like fish (can do with chicken breast cut into slices too)? Take a piece of aluminum foil about the size of a piece of notebook paper, spray shiny side w/PAM. Put a small filet of fish (perch, tilapia, salmon) & 1/2 cup frozen veggies (your choice) in center of foil. Drizzle with olive oil, a dash of garlic powder, salt & pepper to taste (or use Mrs. Dash). Fold foil to make a packet & grill over campfire. If you do it with chicken, make a sauce with soy sauce, garlic, & some brown sugar. Yum!

You can cook most anything you want when out and about. How many options you wish to have is determined by 2 things. You and Your wallet
First: You can get a "Camp Oven" this sits over coals (normally) and by opening and closing vents you can control the temp inside, You can bake a cake, Cookies, Pies or other "Baked goods" in these things, Make bread if you wish.
I don't have one (I use the gas oven in the motor home) but you can do that.
And a propane "Stove" is not much different from the natural gas stove I cook on at the house I used to live in (I prefer gas to Electric, when I got married my wife wanted electric, She now thinks gas is better too) A Coleman "Gas" stove is, however, not quite the same as the propane jobs (Much hotter) I've used one of those to work metal (Like a forge)
Now as to what to cook: I collect recipies, I"ve 3 computers with directories (folders) full of 'em, I"ve been collecting for nearly 30 years
One of the campgrounds I frequent has regular pot-luck cook-offs. The members collect pounds, I collect prizes.. What can I say (I'm the only MAN steping up to claim a prize, Get with it fellas)
But the bottom line is there is nothing you can cook at home you can't cook at camp

English Muffin Pizza... Use your imagination.. Put things you know the kids will eat.. like Pineapple and ham or even sliced up hot-dogs. Have one of those pre-made pizza crusts (like Boboli) to make adult pizza after the little ones go to bed.
Something else thats good to have around for everyone... Kirkland (Costco) Organic CHOCOLATE Soymilk... and don't go "Yuck!"  .. I'm not a big fan of soymilk but! The CHOCOLATE is really great tasting and.. this is a BIG AND.. You DON'T have to Refrigerate it until you open it!!! The little 8oz. ones come with the straw on it.. no glass or plastic to wash.
