Cheesy Chicken Chowder

3 C. chicken broth
2 C. peeled & diced potatoes
1 C. sliced carrots
1 C. diced celery
1/2 C. diced onion
1 1/2 t. salt
1/4 t. pepper
1/4 C. butter
1/3 C. flour
2 C. milk
2 C. shredded Cheddar cheese
2 C. diced cooked chicken

In a 4 qt. saucepan, bring chicken broth to a boil. Reduce heat; add potatoes, carrots, celery, onions, salt and pepper. Cover and simmer for 15 minutes or until vegetables are tender. Meanwhile, melt butter in a medium saucepan; add flour and mix well. Gradually stir in milk. Cook over low heat until slightly thickened. Stir in cheese and cook until melted. Add to broth along with chicken. Cover and stir over low heat until heated through.

Crispy Onion Chicken

1/2 C. butter or margarine melted
1 T. Worcestershire sauce
1 t. ground mustard
1/2 t. garlic salt
1/4 t. pepper
4 boneless chicken breast halves
1 can French fried onions

In a shallow bowl combine the butter, Worcestershire sauce, mustard, garlic salt and pepper. Dip chicken in the butter mixture, then coat with onions. Place in a greased 9x13 baking dish. Top with any remaining onions; drizzle with any remaining butter mixture. Bake uncovered at 350 for 30-35 minutes or until chicken is done.

Corn Casserole With Bacon

6 slices bacon
1/4 C. chopped onion
2 T. chopped green pepper
2 T. butter
2 T. flour
1/2 t. salt
1 C. sour cream
2 cans whole kernal corn, drained
1 T. parsley

In large skillet, fry bacon; drain, crumble, and set aside. Pour off bacon grease; melt butter over medium low heat. Add onion and green pepper, saute' for 2 minutes; stir in flour and salt. Gradually add the sour cream. Heat until it just begins to bubble, stirring constantly; add corn and heat through; stir in half of the crumbled bacon. Transfer corn and sour cream mixture to a 2 quart casserole dish; top corn casserole with remaining crumbled bacon and chopped parsley.

To Die For Crockpot Roast

1 beef roast, sized to fit your crockpot
1 pkg. Hidden Valley Ranch Dressing Mix
1 pkg. brown gravy mix
1 pkg. Italian Dressing Mix
Water

Place roast in crockpot. Mix all three envelopes of the mixes together. Sprinkle on top of roast. Pour about 1 C. warm water in the bottom of the crockpot. Cook on low 6-7 hours.
