Are there any Vegetarian RVers out there? I have been a vegetarian/vegan for about 1 year and I am always looking for easy tips and tricks to make RVing and eating a vegetarian diet simpler

Well I will give you my hints for what works for me, I travel with a couple diet restrictions, no gluten and no eggs of any kind! I do believe there is gluten and or eggs in about everything. Leaves one trying a creative approach to travel and or dining out...
I am not sure what length of time you may be "on the road" and where you camp or travel, meaning able to get to grocery stores etc.
Is what works great for me even tho it can be a pain is planning,planning and planning. I work out menus, literally and put them on a list. Now I do not get so involved that it has to be on a certain day,but have a meal "planned" with all the ingredients I can on hand.
the next thing that has really worked for me is to "bag meals", meaning all the ingredients I can I put in a bag. If a receipe is necessary I toss that in the bag too. For me this takes the stress out of "what shall I have" and then search for all the ingredients....I have a tub in the basement of our RV where I store the bags, makes life simple and does help.
Think about what you like to eat, what you can eat. Buy all you can prior to your trip and organize it as much as possible. Trust me when I tell you I am not an organized person but in this case I am.
Also for dry goods I have plastic shoes boxes (thanks to our Costco) and I store items in those. I put a piece of masking tape at the end of the shoe box listing the contents...I have used this method across the shelfs in our RV and find most efficient use of space plus easy access.
If you are on the road for a while and hooked up somewhere the one item I swear by also is my crock pot. Makes life so easy, can put meal on low and when we get back its ready. Also allows leftovers for another meal or a lunch the following day.
I also bake my items before going so I have my stash of edible goodies on hand. I have been a baker and cook my entire life and with this new restriction am just learning to be more creative and inventive and having a good time with it.
Not sure if any of this will help, hope so....

Not a vegetarian myself, but I do cook alot of veggies together with my meats. Personally I love the wok for RV cooking. It's super space saving and so very versatile. I do soups, stir frys, curries, steaming...you name it. The key is to have lots of spices and different flavor combos on hand. Made a Thai-inspired coconut summer squash the other day in the wok. Also have a great recipe for spicy kale that i make in the wok. All Awesome!

We are attempting to eat less red meat. We are still attempting to come to terms with what constitutes red meat. We laughingly say anything with a face. We have "meatless Mondays". We do A LOT of veggies on the grill. Just about anything can be grilled. Also eat a ton of pastas and grains. All easy to do.

Thanks for posting; I am a diabetic who had a heart attack 3 years ago, and a stroke in April of this year. Having had to drastically restructure my life, I know I am interested in any recipes, or menus you could share. We all know that not only is RV'ing a different lifestyle, but it also changes the "kitchen" environment as well. We will learn together.............

Morning star farms makes a really nice soy substitute product you can use just like ground beef. I have used it in lasagna recipies, and for tacos, etc. I think it's great. Easy to use on stovetop.

I would like to go Vegeterian.. Daughter did for a while.. Wife, however, won't consider it. Oh well.
There are a tone of resources out there on the web for cooks of all flavors including Vegerterian and Vegan. One launching pad is the Compuserve Cooking forum

If you're sensitive to soy as I am due to a seizure disorder, soy substitutes and tofu itself are no answer. At one time, I was eating a lot of both, all in the name of being more healthy; and I wondered why my incidence of seizures increased dramatically.

Glad to hear there are more vegetarian RVers out there. I just feel as though all I do is clean and cut up fruits and veggies. You know there are rv clubs for everything, is there a gourmet vegetarian club? I like to make my own re-fried beans and now I am trying my hand at vegetarian sausage. Thanks for the tip about Compuserve Cooking forum, I will be checking that out.
