We have a (quirky) traditon for our first time out each year, which is usually in March on our trip south to Florida. It's quick and easy and very tasty: Chicken Caruso

Cube and flour 2 boneless skinless chicken breasts.
Brown in a skillet with olive oil.
Add a small jar of pasta sauce (we use Prego) to browned chicken; cover and let cook for 20 minutes to cook chicken thoroughly.

Serve over wild rice (we use Uncle Ben's Long Grain Wild Rice).

Serve with a vegetable or salad.

Total preparation time: 30 minutes

And yes, Don cooks this one - thus the tradition.

For something different you may want to try Classicos Sun dried tomato afredo sauce,Tom's most requested chicken dish now and so quick and easy!
