Someone asked a question on another Forum and reminded me of this recipe.

You can cook asparagus in the oven. It actually works great. Please check out This Recipe for Oven Asparagus.

I have tried it and made these modifications:
I substituted cooking spray for olive oil. I couldn't tell any difference in taste and thought I would save calories for the wine later.
I squeeze fresh lemon juice (bottled may be ok) over the asparagus.
I do not use salt.

As an aside, I use an electric Foreman Grill in our RV. You can cook about 20 spears of asparagus in 4 minutes (on med). It is fantastic!

Al,
I don't know if there is a Costco in your area, but out here they have great fresh asparagus at a terrific price. While it is "in season" we are buying a Costco bunch (read that as HUGE) at least once a week.

We just had asparagus last night (with salmon) and it was delicious.

Try adding a bit of finely chopped garlic (good for you) and some pepper to your asparagus.

By the way, roasting it in the oven is great, but you can also get the same effect by roasting it on the BBQ grill in the same kind of pan you would use in the oven. Saves some heat in the rigs on a hot day.

Here's another recipe for asparagus that we love. Not quite as heart healthy though.
Cook aspargus whole (grill or steam)
Lay down a slice of procuitto
Spread some low fat cream chees on procuitto
Bundle and wrap 3 asparagus in each procuitto slice
Drizzle with dijon vinagrette
1/4 c olive oil
1 tsp red wine vinegar
2 tblsp dijon mustard
1 clove garlic minced
mix well

Asparagus is frequently on our menu. I fix it several ways:

1. Place on a sheet of foil, drizzle a bit of Organic Extra Virgin Olive Oil on it (very heart healthy), and some fresh squeezed garlic. Wrap the foil loosly and pinch to seal. Place on the grill while meat is cooking. At home on our large bbq, I turn the burner on one side down to low and cook the asparagus there. In the RV on our WeberQ, I only have one burner, so I just keep it near the edges and turn a couple of times.

2. I saute asparagus and sliced onion on the grill in one of those bbq pans with holes in it. I drizzle some OEVOO, sprinkle with garlic powder, and cook it while the steaks or salmon are grilling. GREAT!

3. Put it in an electric steamer for 10 min. Drizzle some lemon juice over it just before serving.

Asparagus is great any way you cook it. Just keep it a bit crispy and not overcooked.

I love asparagus and have been oven roasting it for years. It seems like we all like similar but rather different variations of the same idea.

I line a baking sheet with foil, spray with olive oil then put a layer of fresh asparagus on it, slice some mushrooms and red (purple) onion and put those on top of the asparagus. Then I spray a bit more olive oil over the veggies, sprinkle with fresh ground pepper and some garlic powder. Cover it with a layer of foil, pinch together to create steam and bake at 350 for about 20 minutes. You can serve it with or without some hollandaise sauce drizzled over it, your choice.

Thanks to y'all I am going to try this same recipe on the grille next time we take the TT out.
