An absolutely basic soup,it was actually my mom's secret for feeding a crowd with a small piece of meat. Add or subtract more veggies at will and season your own way.

Peasant Soup serves 8+

One spicy Smoked Sausage Cut in coins
One sharp onion chopped
8 (or more) potatoes scrubbed and quartered
1 bag peeled baby carrots
Any other fresh veggies on hand
8 cups water or broth
1 bag shredded cabbage for coleslaw
Salt, Pepper, paprika

Combine everything but the cabbage in large crock pot. Heat all day, Add cole slaw mix during last half hour. Adjust seasonings.

(can be heated on stove top but flavors meld better by slow cooking)

Serve in huge mugs with crusty flavorful bread.
Perfect after sledding or for winter pot lucks.

Sounds good and simple,but does the sausage make the soup greasy? I had a neighbor bring me over a pot of soup with sausage in it when I had an intestinal virus. The sight of grease floating on top was enough to make me throw the whole pot out to the dogs after it got dark! Lol It didn't even look good to Tom who wasn't sick and was hungry.
