Pennsylvania Dutch Potato Salad

This is my Grandma's Pennsylvania Dutch Potato Salad

One onion sliced thin
2 eggs hardboiled sliced
4 sliced cooked potato's
5 stalks celery sliced
place in bowl in layers

Dressing

1 egg
1/4 cup sugar
1 tbs flour
1/2 tsp salt
1/8 tsp pepper
1 tbs dry mustard
1/2 cup apple cider vinegar
Mix ingredients bring to boil stirring constantly then simmer till it thickens. pour over potato mixture
mix LIGHTLY ,cover and refrigerate for 8 hours or more
mix again before serving

thanks, showed this recipe to DW and she agrees we're going to try it. No mayonnaise, grandma's sauce was the clincher.

When you cook up the dressing it should end up thick like ketchup not runny if not thick enough add a bit more flour. Its even better on day two. This recipe has never been outside of "family" before and is very good don't want to see it lost when we are gone

Thank's again Mike, I'll do that. Potato salad is usually a summer time dish for us (no one wants to cook on the hot days) so it may be a little while before we wil make it. Just keep subscribed to this thread and when we do it probably Easter time, I'll post about the results
We will definitely be making it, we both love potato salad and your recipe sounds delicious

Mike, that sound like a lot of celery to go with the rest of the ingredients, is 5 stalks the correct amount? Not a misprint on amount?

Not a misprint but you can add less if you want I don't think grams would mind 2 cups chopped is about what I put in mine. "She who must be obeyed" has informed me all celery is not created equal what I use is around the size of my finger and about 8 or 10" long
