Perfect Poached Eggs

We have a method for perfectly poached eggs.

Using a fry/saute pan, preferably with sides that are 1+" tall. Fill pan with water to cover the bottom and up the sides a little. Put 4 ramekins (small ceramic dishes) in the water. Cover and get the water to boiling (WITHOUT ANY EGGS IN THEM). When the water is boiling, spray the ramekins with Pam. Drop eggs in, salt & pepper them. Put cover on the pan and keep an eye on the eggs. They cook fast and you can pull them out at your preferred doneness. I recommend using tongs to grab the VERY HOT ceramic ramekins.

Spray foam bowl with pam, drop in egg, punch yoke, cover with foam plate, microwave one minute. Salt and pepper as needed. Not purist poaching, but it works!

While I was down last year with swine flu I went on base to clinic. Saw the thrift shop was open and stopped. they had an egg poacher/hard boiler that I grew up with in the 60's. Bought it and it works just as I remember as a kid. It cost all of two dollars. My son has since fallen in love with eggs benidict.
