Potato Salad
6 large potatoes, cooked, peeled, and cut into 1 inch pieces
1 Green Bell Pepper, seeded, stem removed, and diced
1 onion, diced small
2 cloves garlic, crushed and diced, or 1Tbl garlic powder
2 stalks of celery, diced
1 cup of sliced pepperoni
2-3 tbl sweet relish
1 to 1 1/2 cup Kraft salad dressing, or mayo if you prefer
2 Tbl mustard of choice, (I use dijon)
1/4 cup sugar
2 small jars pimento's diced
1 tbl vinegar
salt and pepper to taste, if desired
Cook potatoes in salted water until tender, peel and cut them into 1 inch cubes. Place in a large bowl.
Add onions, bell peppers, garlic, celery, pepperoni, sweet relish, salad dressing sugar, mustard, or mayo, sugar, vinegar and salt and pepper to taste. Toss til well coated and refrigerate for at least 2 hours before serving. Refrigerate any leftovers you may have.
Serves 4-6
