rv meals
For those of you who camp alot, what are your 3 meals like???? Would you please give some ideas as to what things your preparing for your meals.....do you eat out often??? For those of you who do cook in the rv, are you preparing full meals...i'm looking for some ideas as to how to us fed on the road??? At home. I've always cooked at least one large meal a day at home, with light breakfast and lunches.....ideas please

We prepare the same type meals in the RV that we normally do at home. We also eat out from time to time but we also do that at home. If we are on the road and stop for lunch, we usually just fix a sandwich or have a salad - something easy and light. In the evening we will sometimes grill a steak or pork chop outside and fix a salad or vegetable the same as we would do at home. That's an advantage of an RV, you can do the same meals that you like and do at home.

My wife is Italian so she cooks for an army whether we are at home or in the RV.
On road days, breakfast and lunch are simple (cereal and sandwiches). Dinner can be frozen chicken breasts and some great instant mashed potatoes that she found.
On days in camp, she ends up cooking for the boys and any campground friends they have found. French toast on cinnamon bread for breakfast, grilled cheese for lunch and a big dinner. When we bought our MH, we had them put an oven in. She makes hams, pasta with homemade sause, bakes cakes and brownies. She uses the convention microwave at the same time she has another dish in the gas oven.
To save time, she often cooks stuff at home and vacuum seals the food and freezes it (meatballs, pesto, sausage and peppers, BBQ pork, etc). Then all she has to do is defrost, heat and serve.

We eat what we call "brunch" and "lupper." Brunch about 9AM and Lupper about 3PM. We seldom eat out. I cook the same way I did at the house; most of our meals are not quick-and-easy throw-togethers. We have a 38' Landmark Pinehurst so I have a kitchen with plenty of storage space and counter space. I use primarily my cast iron cookware; I have only one pan that isn't cast iron that I cook brown rice in. We have an electric griddle; watch those countertops that are only good to 350 degrees! I have a fry baby. I use my convection-microwave every day.
That's how I cook. What do I cook? Chicken fried steak, mashed potatoes, fried okra and corn. Sweet and sour chicken. Cashew chicken. Kielbasa, fried taters, veggie. We don't like sandwiches so we don't have sandwich material in the house. I fix salmon salad a lot; basically a veggie salad with a small can of salmon topped with mayo and dill. Hubby doesn't like casseroles so those aren't fixed either.
For brunch, we fix sausage biscuits from scratch; bacon/sausage, eggs over easy, toast; my special blueberry pancakes with breakfast meat. I fix fritatta; eggs with everything but the kitchen sink.
No cans, no boxes, all fresh. We eat very well and nothing is wasted.

RV is home.. Meals are same as at home for the most part only I"m more likely to cook outdoors if weather permits with the RV.
Tonight, for example, will be indoor cooking,, Home made Chicken Pot Pie ah-la Wolfgang Puck.
I just made the crust, and cut the veggies a few minutes ago (Prepare in advance) will do chicken and sauce later this afternoon/evening.

i am new to the convection oven....can you use tin foil in the convection mode??? are you able to bake cakes and pies in it ???

Hey RVThere - aren't the frozen chicken breasts a bit hard? We always at least thaw ours out, and even cook them a little if we have the time.... (teehee)

Like most everyone else that has responded, we cook in the RV like we do at home. I eat a lot of chicken and rice for breakfast, wife eats cereal and toast. Lunch is generally a sandwich, sometimes with soup. Dinner will be pork chops or steak, or chicken, or a cassarole,or fish, along with vegetable and a starch. We found that a small crock pot, a George Foreman grill, an electric skillet, and a rice cooker are important, along with a couple of skillets and sauce pans. With the Convection Microwave, you can use metal when in the convection mode.

I've baked my famous German Chocolate Cake in my convection microwave with terrific results. I bake using metal pans as well as glass pans. Biscuits, brownies, meats(the first meatloaf was overcooked but I've learned), cakes, cookies. I have a regular oven as well that I've never fired up. I had a dual fuel oven(convection and gas)on my stove at the house and learned to use the convection feature exclusively.

You mean you're supposed to cook differently? Even when we tent camped, I still cooked the same way I did at home (of course that was back when I was still learning to cook to my recipes were somewhat limited).

Well.. I'm more likely to cook on the grill or open fire when camping.. Though for some time now our meals have depended on who's cooking.
Wife: Remove from freezer, heat and eat
Me: Break out cookbook, try something new
Last night it was a Classic Chicken Pot Pie recipe from Wolfgang puck I got from Arcamax publishing..... Not the healthiest recipe on their web site (has 14 tablespoons of butter in it, plus a cup of heavy cream) but... Man was it good!!!!

i know you can use metal pans in the convection but can you use tin foil????thanks

I use tin foil for wrapping things or lining pans for easy cleanup in my convection microwave. I use my convection nearly every day, baking, broiling, cooking just like a regular oven.
