I've used both an IP and a crock pot.

My crock pot was a pain as it does not fit in the sink. I did love smelling the food cook, it gave us something to look forward to when we arrived. I am thinking of buying a small CP that will fit in the sink, but....

I bought the IP, which I'm finding I love for a lot more than I did the crock pot. I prep 'dump' meals for the trip, so when we arrive I can empty a ziplock of ingredients into the IP and let it cook while we set up camp. I can have beef stew in less than 1/2, fall off the bone ribs in about the same. Last night we had Goulash in about 20 minutes. And I can cook from frozen - particularly helpful as I often forget to take anything out in time to thaw.

We rotate with a seperate Pressure cooker and crock pot.

I have the little one (the 8 in one seems to have issues - check their site) and love it. Its perfect for the two of us and I discovered Melanie Cooks on the web and so far her recipes have been perfect. Using the pressure system on it and you just need to watch where the release is pointed when you release pressure. Make sure your vents are open before you release pressure. I used it outside the first few times.

I am absolutely in love with The Instant Pot IP-DUO60
I have used the traditional stove style pressure cookers all my life so I am not new to pressure cooking. However the features and convenience of this cooker beats anything I have ever seen or used.

It is a slow cooker too!! Every so often I put some rice pulao or lamb stew in there and set it on low heat to slow cook. I come back home to a tasty meal. I can even set it on delayed start (careful though when you have meat. Meat shouldn't be left out at room temperature for more than a certain amount of time).
And it is a yogurt maker!! I make my own yogurt at home. This cooker lets me scald the milk and incubate yogurt all in the same gadget!
This is the best tool for busy working professionals who prefer home cooking! I can't imagine my life without it anymore, you can check out this review for the instant pot

Just Learning to cook in the RV

Hello Folks, Ok, so we are headed out for our first long trip in the RV. 4 months.
That being said, at home
I like to cook. I am used to having quite the array of food items in my pantry/freezer to prepare whatever I'm inclined to that day. I'm trying to change my way of thinking moving forward. Any ideas, advice in scaling down my thought process. Love my slow cooker. I haven't tried a pressure cooker yet. Just looking for guidance from the pros.
Looking forward to hearing from anyone willing to share.

We like our elec pressure cooker, but it's really no different than a crock pot, just faster. We plan our meals by what is on sale at a local grocery store. We found some stew meat yesterday on sale, so today is vegetable/meat soup.

We bought an Insta-pot last summer when the wife's old but expensive All-Clad slow cooker crapped out. She likes the IP alot as a pressure cooker but not so much when used as a slow cooker. She's thinking about buying another slow cooker to go along with it.

Having used my Electric cooker as a slow cooker, I have found that I can cook the same meal much faster under pressure than keeping an eye on it and letting it cook for 4-8 hours. Plus my electric pressure cooker tends to cook a bit hotter than the slow cooker.

She has tried to cook sveral tried and true recipes, using it as a slow cooker, with disatisfactory results. She ended up having to dial it up to high and delayed dinner an hour or so to get it done. These are recipes that she had done many times in the old slow cooker.

With that said, she does like it's ability to cook something fast as a pressure cooker.
