Anyone on the South Beach diet and how is it working out for you in the RV lifestyle.

I have been doing the South Beach Diet since April 2004 - I spend most of my time in Phase 2 or 3 but go back to phase 1 about every 4-6 months. I have lost 75 pounds. I find it works fine with the RV lifestyle I lead. I work 50-60 hours a week and head to my seasonal site as soon as I can on Fridays. During the off season, I take 3-4 weekend trips in my class C. Snacks are the hard part - just keep nuts, 2% cheese, and fresh veggies on hand - no chips or crackers!
