We only use the camp stove or crockpot while camping, no oven. Now what?

Hit a second hand store and buy an old pressure cooker and use it on the camp stove as an oven. Put your ribs if a tinfoil tray that fits the cooker and put your ingredients in and away you go. Oh and the cooker can be laid on its side if you are careful during setup. For this you need the addition of a metal shelf of some sort. You also do not try to use the gizmo that builds the pressure it gets thrown away.

My weird recipe

I marinate the ribs in dill pickle brine for 8 to 12 hours before the rub.

I make a rub using the 'everything but the kitchen sink' method. Never the same mix twice.

Most often I use:
Salt & pepper
Old Bay Seafood Seasoning
Garlic powder.
Montreal Lemon Chicken seasoning
Sometimes a sprinkling of dill seed sometimes not.
Paprika sometimes
Chili powder sometimes

Cook it low & slow until done but add a few minutes of high heat before serving to get a nice 'crust'. I usually sauce them along with the high heat.

Try the pickle brine! I was skeptical when I read about it but it keeps 'em moist & tender and you have to really search for the dill flavor, if you can taste it at all.
