You didn't specify it had to be cooked in the RV. My wife is a very good cook but when we travel, we look for Mom & Pop style BBQ stands along the route of travel, followed by good soft ice cream.

Yep..
So despite less than optimal weather in the RGV since we've gotten her - we have managed a pork roast and filet on the little weber 2000 - no smoker activity yet. We did shrimp and steaks in Rockport when we first set out... so again - anything we can grill... we also picked up some "Mexican Brown Sugar" which was excellent grated on grilled sweet potato slices... the filet was larger than it looks. We have also made foil packs of RGV cauliflower and broccoli with garlic olive oil. It's a cooking extravaganza out here on the road. Others hit every restaurant (and do some) but cooking has a life of its own on the road for us... smoked paprika shrimp bought from the guy at the harbor in Fulton - somebody stop me...

Rib-eye steak with fresh green beans cooked with bite size red potatoes and small cubes of ham. BACON can be used instead of the ham.
