Hello All, Can anyone confirm the bedding sizes for the Sleep Number King Mattress Option and the Drop Down Bunk over Cab option for the 2019 Canyon Star 3513?

Can't help with drop down, but the king bed is an RV King. Standard king size is 76x80 long. An RV king is 72x80 long. You can find specific RV sheets, but the selection is limited and typically they are expensive. We use just regular king size and use bedding clips like the link to keep the fitted sheet in place.
