Black/gray tank gauges not accurate
I believe both indicators are not working correctly. I’ll address those issues better when I get back home this weekend.
In the meantime, what’s going to happen if I exceed the capacity of either tank?
I don’t believe that will happen. I’m being very judicious in water use but can’t guarantee how much capacity I have left.

The black will come up in your toilet and the gray will come up in the shower drain.. then just dump them. Consider alternate tank level monitor such as garnet Seelevel. They are easy to install on exterior of tank and very reliable. Few tank sensors of the internal type work very reliably.

As they get close there are telltale signs like a little girgle or something. I would dump every 3-4 days until you can get a good idea how many days you can go.

The toilet will "burp" when you flush. Also, when flushing, you will notice a difference in the sound the toilet makes as it fills.
The gray tank starts to "gurgle" will it starts to get full. If overfilled, it will back-up from the lowest point drain in the rig, probably shower area.
The sensor systems for this issue are known to stop reading correctly. We just get used to the sounds the black/grey tanks make and then dump as needed.

Grey tank is easy, stinky but harmless stuff will show in in the shower pan--you'll smell something awful, wonder what it is, and then see 2 inches of gray water in the shower. Black tank--shine a flashlight down the hole when the valve is open and you can see if it's below the bottom of the tube. Trust me you don't want the toilet to overflow.

We use all the above methods on burping and visual down the black, but also we know our fresh water tank capacity and use that as a quick judge initially when monitoring. Only had our grey come up into the shower tray once and was easy to remedy with a bucket or two put in the black till we hit the dump.
Our grey is keeping indicator lights on even after emptying so not sure how to clean them off = any suggestions appreciated. Shows Empty light on Quarter Light off and 3/4s and Full light on now. Black tank always works well after being full with lots of water and a good drive prior to dumping, plus a black rinse.

Have you tried cleaning the tanks? Many people use ice cubes in a 1/2 tank and drive for a while in the black tank. We use blue Dawn dish soap. 1/4 cup or so after each dump.
We're lucky to have the sensors on the outside of the tanks, but still like to keep them somewhat clean.
