Two reasons come to mind.
Gas units don't handle massive battery banks well because of weight and space.
Most of us who are inclined to buy a gas cooktop. We like them better than Induction. That also goes for convection ovens.

Been looking at Canyon Stars for my next coach and without adding up the potential electrical load even with a 7KW gas generator I not so sure there's enough capacity to include an induction cook top. 2 - 13.5 BTU A/C's, Washer, Dryer, Electric Water Heater, Convection Microwave all running at the same time might be pushing the capabilities of the generator. Maybe with a good EMS system to shut down the water heater and one of the A/C's if would work.
Personally, two rigs side by side, equal in everything except one with an induction and the other without I would take the induction. I've got a NuWave counter top version that we use more than the propane. Still going to need propane for heating. They don't make a gasoline fueled space heater, yet.

Aside from the lack of a large enough battery bank, the gas models already have propane for the furnace and hot water heater so why not just have a propane cooktop. It meets the price point as well.

Here is a induction cook top installed by DS Don in his coach.
I always had a gas coach and did many mods in all of them and I see no reason why you can not put in coach what ever you like.
A EMS is not needed, you just decide what items you will be using for cooking and adjust accordingly for current you will be using off your 50 amp service.
I do not think your would be using a large battery bank for cooktop draws to much current anyhow.
Cooking if you boondock maybe a problem but you can always start Gen.

We use portable induction cook top also, unused propane cooktop will remain for resale.

Curious about the anwer "not enough battery bank" Our CS has 6-six volt batteries, thought that was all any of the units have.
As far as the Generator, the 7K I have would probably have issues with induction, convection and both 13K heat pumps, but induction tops don't use that much power, an induction burner uses about 1300 watts, which is less than the convection oven, so I think it would be possible to use the induction. Someone I know has one an likes the fact he can actually take his outside.

If you look around you will find that most gas MH's normally have space for 2 batteries mounted on the rail under the steps. A few have more than that. You own one of them. You also probably have 50 A service. In essence your CS is really a lightweight DP.

Bob,
I made the assertion mostly based on the fact that the Newmar (AFAIK) does not wire the induction cooktops through the inverter. Figured there was a reason that they didn't.

nothermark,
Your comment "In essence your CS is really a lightweight DP" really hits home. I am always wondering why all the threads about handling and driving with white knuckles .... Our CS handles really nice, is it as quiet as a DP in the driver area, NO and probably doesn't drive as good as Comfort Drive however neither of those issues seem to be overwhelming. Guess having a "lightweight DP" explains a lot. Thanks for the quote

Newmar seems to think of an induction cooktop only as a means to go all-electric. Looking at ventana options, the only way to get an induction cooktop is the $11k all-electric option with hydronic heat. (Other than special order of course)
It is too bad no induction in Bay Stars. It cooks so much better than propane.

I could argue with the induction seekers but my taste and experience made a 2 burner Ramblewood propane cook top from Amazon the best choice. It is 12" wide and 20" long and has a high power burner and regular one. Mine with a black glass top was $332, a SS top is $298. I can put a 12" skillet on one burner and another 10 or 12" skillet (crowded) on the other. I boil pasta in a 10" 12 qt pot for pasta and use the front for a 12" pot to simmer sauce. That cannot be done with the cheap OEM 3 burner cook tops or the 2 burner that Newmar offers. It has electronic ingition and a thermocouple that shuts off the gas if the flame goes out. I am very happy with it, and got more counter space with my new corian stone looking counter.
My signature shows I have the electric for an induction cook top but I like to camp with minimum noise and cooking breakfast without the generator allows the use of the inverter for the coffee maker, microwave, or toaster oven at the same time. With several guests I can put a 19"x13" non-stick thick alumn pan on for a couple pounds of kalbasa cut dollar size, O'Brian potatoes, and 12 to 18 scrambled together and make toast in the toaster oven while the coffee stays hot too. I have used a 14" non-stick skillet to make a mess of blue berry pancakes too.
