I think I would try to remove them myself. You may want to contact summit and ask them about removing them. It just doesn’t seem that it would be that difficult.

shouldn't take more than a couple of hours... the hardest part will be removing the original panel and cleaning it up... once you do that, replacing the one will be easy since you have panels on either side to align too... I would put $800 in the safe or a mason jar and spend the afternoon doing that and then know its done right.

What’s the best way to polish the trim and take off oxidation.

I would clean with soap water, then with WD40 to get rid of any adhesive residue / blacktop splotches, then use rubbing compound and a compounding bonnet on a polishing wheel. Ensure you are rotating over the edge and not into the edge so it doesn't catch the bonnet. Follow that with polish.

I’ve had good success with chrome polish.

I watch NIRVC replace a piece of SS trim on my coach when it was new.
They used fishing line. By getting behind the trim and using the line as a saw, it zipped right through the foam tape and within a minute was off.
Clean up of the old foam tape took a little longer but not a monumental task.

Unfortunately this is what happens at a dealership that doesn’t have a specific labor guide, the writers and or technicians are free to pull Radom labor costs out of the air. I would call the service manager up and give him/her the opportunity to adjust the pricing. As others have said 2 to 2.5 hours is a reasonable estimate.
