Hydraulic Levelers

So is it ok to spend say a week with any, some, all my tires off the ground? I am tired of fudging the system to make sure my tires are on the ground.

I don't think I would have "all" my tires off the ground. I would follow the Mfr advice. Not sure what brand levelers the Baystar uses but the idea is to keep the coach as low as possible yet still level. Baystars sit kinda high normally. I remember seeing a Baystar or 2 at a Newmar rally with the front tires off the ground, trying to get level. The bottom step on a Baystar is already up a little, now it was like 14" off the ground.

My Equalizer jack system auto levels my coach too high for my liking so I level the coach manually. First, I plant the jacks, then adjust front to rear and side to side as necessary. Assuming a reasonably level site I can achieve a level condition at a much lower position. A bubble level on my phone makes this easy and quick.

Agree. The reason is with the rear wheels off the ground you lose your parking brake.

I understand your frustration, but like others have said, I am careful to not let my tires come up off the ground. One thing I installed to make the job easier is to install a device called "levelMatePRO" by Logic BLue Technology. I don't remember where I got it but it was only $150 or so. It alows you to manually level your rig very easily and quickly. It also helps find the best spot to level when you are pulling in. I also use tire blocks, I elected to purchase "Quality Plastics Utility Blocks" to put under the tires. A bit spendy but was faster then making my own out of wood. Both of these make a huge difference in making sure you stay in contact with the ground. After a bit of practice it completely elimnates the up and down of the rig to find level.
