Manual switch between shore/gen and inverter

I have a 2019 New Aire - I recall seeing on IRV2 that someone had installed a double poll/double throw switch for the Air Conditioning 120V/AC circuit so that they could manually switch powering the roof top unit from shore/gen power when it was available or with a flip of the DPDT switch from their inverter when they were not plugged in. I'm thinking about doing that for our AC(s), and the induction cooktop circuits with each circuit having its own DPDT switch. I know that the inverter can only supply a max of 3000W but there are situations where I've got lots of solar and I'd like to run 1 AC off of the inverter while boondocking. Or we're making dinner and it would be nice to power the induction cooktop without having to manually move the plug to an induction powered outlet in the kitchen.

I'm looking for a wiring diagram to clarify my understanding of how to do this. What has me a little stumped is whether or not Neutral has to be switched as well - I don't think it does because neutral is coming back to the main panel from the load which is the same neutral that is used by the inverter and therefore I can leave neutral alone. Do I understand this correctly?

A Double Poll/Double Throw switch has three positions On from one source, Off, and On from a second source. To move between two possible sources, you move the switch from on to off to on which safely moves whatever you are powering between the two different circuits.

What are your thoughts on the best way to do this?
