As was pointed out above, you're buying head room difference. As to quality, there is little difference between a Northern Star and a Dutch Star, which was way more popular. Having said that, it is important to be very aware of the overall height.
Is the Cat 350 a C-7 or a 3126e (or some variant). The C-7 will have one serpentine belt. The 3126 will have two belts, one driving most of what's hooked on and one driving the water pump. To some of us, having the water pump on a separate belt is a good thing. If the main belt breaks, you don't overheat your engine, you just loose the alternator, compressor, etc. There is no "limp home" ability when you loose the main belt. At that point, you'd better have a spare for sure.
You're getting in at a sweet age -- no EPA guidelines to mess with the engine's performance and efficiency.
If you don't have service records, the best thing to do is get a Level 3 service performed. It covers everything as well as checking all the lube points -- essential. Check the age of the tires. Something that has, basically, been sitting (lack of mileage) isn't' always a good thing. If the tires have cracked from exposure to sun, etc., then you'll want to get new tires very soon. New tires are cheap insurance as opposed to a blow out that can cause damage.
