I have the same WP valve. I’ve had it for 7yrs without a problem. Got tired of the cheap Camping World models that reduce pressure and overall flow.
Reducing pressure and not restricting flow requires a more expensive device.

Really surprised PEX was used in your 2007 built RV

What did they use???

My 2007 built in 2006 RV definitely used PEX

Think RV MFGS have been using PEX since 2004 vs the old grey Quest poly

I'm with Old Biscuit. I fill my FW tank and run off the on board pump. Always the same pressure, and it's WAY cheaper to replace the pump now and then (only one so far) than having flood damage happen. People wiser than me taught me this.

I also dry camp a lot at provincial parks, etc, so we're used to the pressure and flow. I've seen pressure over 100 psi at times, and that scares the heck out of me.

People need to remember that its true that the PEX can split, but many of the leaks are caused by either cracked fittings (Plastic) or bad crimps that have worked loose over the many miles of bad highways.
I also run off of my Fresh Water Tank (like OB and Unplanned Tourist) but still use a regulator as it is PEX that is run from the City Fill to the Tank.

It happens!

I was on a 6 month contract to help out at a nuke plant during an outage. I got handed a test to show that a design change for adding a pressure regulating valve worked as designed.

That test turned into a soap opera. Eventually, the test was performed by a different test engineer while I was home for the holidays. When I got back. I asked how it went and was told to go see.

I found the test gauges showed the system was at the design pressure. That was not right and should not have been possible.

Getting in the habit of turning off the pump when you are out of the RV is just like turning off a light when leaving the room.

Actually the Regulator maintained/control water at 50 psi
Regulator wasn't the problem
WH Tank hot out line fitting 'failed' and line blew off
Water ran at 50 psi for many hours while we slept

After that we have always used the fresh water tank/pump and flip it off at night or when we leave RV
Simple.........

I also have our regulator set at 60psi and it's installed like DSD's.
