Raise the seat as high as it will go. Now your feet dangle above the floor. Build a platform and cut out fuel and brake spots. Look at my previous thread as to measurements

I found a small LED fixture that I attached to dash with command strips.
[2 PACK]OxyLED OxySense on Amazon. These were touch sensitive and worked well, but went thru batteries quickly.
Funny story: We couldn’t see ours either after buying ur 2012 Phaeton 36 QSB Dec 2021 which was scary when I (newbie) was trying to learn how to drive it. After my husband drove us back to NE from FL (where we bought it) and asked our local Freightliner mechanic for a fix. He told us to turn our headlights on and low and behold we could see the gauges.
That said I love the solutions suggested . Maybe Gary had less problem seeing it due to the height thing.
After reading the OP Iam not sure if your problem is the gauge cluster not bright enough. But if it is I had the same problem. My eye sight not as good as it use to be. I have a 2019 32SA. Didn't want to mount led strip light over gauges so what I did was replaced all the incandescent dash bulbs with led replacement bulbs. The bulbs with 3 leds worked best. My dash had an access panel that was held in by Velcro. Take a picture with your phone of the backside gauge cluster so you can see how many bulbs to replace. Remove it and you can reach behind the gauge cluster and remove the twist lock bulb retainer and switch out the bulbs. I found the led bulbs on Amazon. Made a big difference. Hope this helps.
I had the same issue on my 2014 red. To the point that I was thinking of re-designing the dash. Then someone on the Tiffin Forum asked if the steering wheel telescoped. I didn't think so and there was nothing in the brochure that said it did. But I pushed the lever with my foot and gave a couple of really good yanks - well now I can see the speedometer and tach. I hope your fix is that simple. Good luck.
Tiffin 2014 open road dash gauges are impossible to see while driving. Se31 model gas anyone found solution?
Tiffin has a fix. Same problem with my 2014 Phaeton. Red Bay techs cut a new dash plate on CMC and repositioned the instruments. Took 20 minutes to change over. Call and see if they can send you one if you can't get to Red Bay.
