I have the exact same striker/bolt assembly on my Alpine.
I found that I had to align the bolt with the latch and tighten it somewhat to test close the door, checking ease of closure, full latching, and smooth function of the deadbolt. Once that was set, I tightened the bolt further, at least to the point where I could not move it by hand.
I found that if I didn't tighten the bolt enough, traveling and opening and closing the door moved it to a point where it left a gap and/or the door had to be slammed to latch completely. Sometimes the door would unlatch from the "full lock" position to the "safety" position while traveling. I would also have to push in on the door to work the deadbolt.
In short, I set it to work correctly and tightened the bolt so it was not able to move at all. I have had no issues.
As far as removal/replacement of the bolt, it should be easily done by removing the screws in the jamb plate. You should see the other side of the bolt and determine why it cannot be fully tightened. Since you already bought a new bolt, that investigation is unnecessary but you may find it is repairable.
