There is no difference in capacity using two 12 volt 105ah battery's and Two 6 volt 210ah.

I said 2 pair. That's 4 ( four ), 6 volt batteries. That equals 470 AH.
The 50% usable capacity is a myth. You can use all of the batteries capacity. It is recommended that you only use 90% and leave a 10% buffer. Once at 0%, damage will occur.
If you use 90% of capacity every deep cycle, the batteried will last 1/2 as long as 50% capacity.

500 full discharges is a lot of dry camping days.
