Cool Replace wall in slideout from water damage

Hi folks! I discovered previous water damage to the galley slide side on my recently purchased Crescendo 8386. Bad i didn’t catch it previous to the sale but it is what it is at this point. So the previous owners said they had all new seals put in on all the slides, and it’s apparent by looking. However, they neglected to tell me it’s because they had water intrusion at one point. The walls did not appear to have had it, but as I was cleaning after my purchase I discovered by accidently pushing on a spot that my thump went through a soft spot. Looking further I could now see it had damage from above and ran down the walls however the wallpaper did not show the usual signs. So upon investigation, there is no current leaks. My question, has anyone ever replaced the cheap paneling in that area behind the couch and if so, do you have pics or how you did it and what you used in its place? I already know the cabinets above will need remove to do it. I’m very capable having construction experience but curious as to the structure behind the paneling. I thought about going right over it but not sure that’s best.
