After a few hours of research I am unable to find any examples of removing the "box" TV cabinet in my 02 CC and replacing it with a LDC TV. Cabinet modifications etc. I would also also like to integrate all the components into one controller with a single remote. Can anyone point me in the right direction or suggest a audio/video controller?

DKW - I had Country Coach in Junction City build me doors to put over the holes left when I had the old CRT TVs taken out. We bought a flat screen which we sit on our computer desk in the Living Room. Simple, works for us. TV is at a lower level viewing height which we like. We don't have a TV in the bedroom as we would not use it if we did. Putting everything on one remote was not a priority for me so we have several. I removed the CD changer and CD-VCR player. I have a blue ray for the new TV. I had a Motosat Direct TV HD dish put in. We still use the Bose sound system as it is an excellent system.
You did not say which model CC you have so I don't know what your living room looks like. CC up in JC is very able to do anything with cabinets. They did a super job matching our custom color ash cabinets. And the price was very reasonable.

We just upgraded our 2002 Allure 40 ft living room TV to an LCD Flat screen. I modified the protrusion supporting the old TV and cut everything back so I could mount the new 26" Samsung diagonally across the new opening using an articulated arm. Never liked bumping my head on the corner sticking out anyway. It turned out quite well after a fair amount of customizing. Used the old leather and oak trim to create the new frame etc. Even the wife thinks it looks pretty nice.
