Can we charge it ourselves with the canisters like you buy for car dash AC? If so what kind to use for Motorhome dash?

There should be a sticker some where.

I used the R134, when I first bought my Windsor the air wasn't cold. I added one can and that fixed it for ~10 years. Last year I bought a set of gauges so I could watch the pressures. Added some freon and it started working great.
Some people go through the whole system, but if only leads down over a period of years adding is probably the cheapest option. If after adding and it goes down after a short period of time you may have to tear into it further.

You can find a lot of threads on dash AC as well as temp/pressure charts. If static pressure is below 20psi I would say you need to vac it down and test for bleed down time then weighed charge added.
Also those adjustable temp/pressure gauges on cheap R134A charge can adapters will put you over charge if you follow it, on system with TXV expansion valve. You need to go by chart , temp and proper rpms. if adding a can or two.
You can find guys that do HVAC on the side to vac and weigh a charge. You would need to make sure you have proper air flow across condenser and right rpms to set it right.
