How well do they hold up in the cold?
Are these coaches warm when it is 10 degree F outside, even by the windoes?
A. 2003 Beaver Marquis?
b. 2003, 4, and 5 Signature?

Our 04 Signature has survived -10F so far this winter. No freeze ups yet and very comfortable inside. It can get a bit cold by the windows.

Well then, do all 4 of the mentioned models come with Aqua Hot? And are the AH models cold even at the (double-paned) windows?

The aqua hot does a good job of heating the inside. Yes the double pane windows are cold to the touch. We just drop the shades to eliminate the cold.

The answer varies, most Motor homes with enclosed water tanks are rated only to 20 degrees F, going down to 10 requires you add additional heat to the wet bays (i have a string of C-9 Christmas tree lights under my fresh water tank and a 100 watt light blub in the other end of the bay that does a good job.
Warm inside, the furnace is good down to at least zero F, but near the windows.. Well the bedroom window I put a blanket over it. So i stay comfortable. helps in the summer too (keeps heat OUT)

We are very comfortable in the cold weather and we also just close the shades and honker-down!

While our is not a Monaco, it is well built and insulated and we have Aqua Hot. The windshield is a big loser of heat on any motorhome since it is not double pane. You can heat these beasts in really cold weather, but it takes a lot of energy whether it be diesel (Aqua Hot), LP or electric. IMO, short stays in really cold is OK but I don't think any of them are really designed for prolonged stays in really cold temps (say below 20F).
Even double pane windows will sweat if you are not careful to provide a way deal with moisture in the coach.

Tested mine down to 17 degrees with no freezing problems but added extra heater in the basement.The only problem I had was the propane regulator froze and woke up at 0200 with interior very cold (30's). I know the regulator is not supposed to freeze up at these temperatures, but after calling Marshal, the manufacturer of the regulator, they were not surprised. I have since added some heat to the propane/regulator area and no other problems. If the regulator does freeze, hot water poured on the regulator solved the problem temporarily. Furnace (or aquahot) is the only solution at those temperatures as ceramic heaters and/or heat pumps do not work.
