I redid my flooring but did not remove the tile in the kitchen and bath because of the way it was laid. The flooring was done before the cabinets and walls were installed meaning it would have been extremely difficult to remove all the tile besides the tile laid under my raised floor slides. I did not want to deal with that.
But I have quite a bit of experience laying tile, fixing broken tile, removing tile etc.
The tile will break pretty easy but it will result in sharp shards of tile and a mess. If you are removing all the tile in the front cover it with a heavy old tile and use a hammer to break it. Some will come right off/out and other pieces will stick to the floor along with the mastic that Monaco used to lay the tile. I'd recommend buying an oscillating saw , you can buy a cheap one at Harbor Freight,

Get a long blade attachment that will reach under any of the consoles. You should be able to remove pieces of tile and clean up the floor pretty easy with this.
When I did my flooring I removed all the screws holding them down. The one on the drivers side I lifted up and secured to the wall. I completely removed the passenger side one. This allowed me to easily lay the flooring in those areas.
My front center console seemed like it would be way to much work to try and remove (I looked at this hard) so did not remove but when I was putting new flooring in it was a challenge to work the LVP tile under it but I got it done.
