Removing under sink

Has anyone removed a Blanco composite kitchen sink from the Corian countertop? We have a large sink and would like to install double sink instead. It seems that the sink is glued with epoxy to under the counter.

Any hope of taking it out without grinding the hell out of it and making a huge mess inside the RV?
