On some motorhomes even with the battery shutoff in the off position a few things are still on such as the solar panel and the inverter/charger.

Even when the Inverter/Charger is off and you connect the battery cable you will get a spark because of the in rush current charging large capacitors inside the Inverter/Charger.

When replacing batteries, you are instructed to turn both coach and chassis disconnects off, then remove the two fuses that come from the solar panel if one is installed. The battery disconnects also take care of the inverter but if you want to be sure you can always just flip the inverter switch off too.
