Gatorcruz, Just thinking about your intermittent problem of STOP ENGINE light. In another thread you reported reduce engine performance. A clogged fuel filter may be your problem. Change it and cut the old filter open to see if you have algae in your fuel.
A coolant level sensor should produce a CHECK ENGINE light and not a STOP ENGINE light. Hope this helps you diagnose

KIX, FYI on our Spartan chassis we would get both the check engine alarm/light and the stop engine alarm/light from the coolant level sensor. Checking for fault codes on the Spartan display before turning off the engine, identified it as the sensor. We also have a Banks PDA, which gives the OBDII codes, which said the same problem.

My husband pulled the sensor, cleaned it off a couple thousand miles ago without the alarms going off. We hope it extends the time before we need to replace the sensor.

INteresting.....low coolant level shouldn't give STOP engine but.......anything's possible.
I tried cleaning mine to no avail.
